Hisn Shuroof is a village in the Haraz mountains of Yemen, above 2,250 m. Hisn means fortress in Arabic, and the coffee grown on its terraces is built the same way: dense, slow ripened, concentrated.

The whole cherries are fermented in a sealed, oxygen free environment before drying. This anaerobic natural process pushes the fruit to the front and gives the cup its depth.

In the cup: fermented grape and red wine, red fruits, chocolate and citrus, with vibrant, well balanced acidity and pronounced sweetness. Best on V60 and filter. As espresso, bold and winey, for the adventurous.
