Here, on the volcanic slopes of Cauca, the Castillo variety unfolds its elegance through meticulous cultivation. Handpicked at perfect ripeness, the cherries are nurtured with double aerobic fermentation using Kluveromyces lactis and finished with a thermal shock wash, capturing every delicate aroma and flavor nuance.
We’ve named this lot 1936 Verbier, after the Swiss alpine village celebrated for precision, serenity, and luminous landscapes. Like its namesake, this coffee is balanced, refined, and captivating, a harmonious union of craft and nature.
In the cup, Colombian warmth meets Swiss finesse. Caramel and blossom aromas lead into flavors of caramel and pomoroso, unfolding into a lingering finish of rose tea notes, lactic brightness, and a creamy, silky body.
