It’s a cup that balances tradition with nuance — clean, elegant, and unmistakably Lucern.Technique: Traditional washed with oxidation, depulping, open-tank fermentation, and mechanical drying.

Process Story
In the highlands of Cauca, only the ripest cherries are handpicked with meticulous care. After harvest, the cherries undergo flotation and ozonated water cleaning to remove low-density and defective fruit, ensuring purity from the start.

The process begins with a 12-hour oxidation stage, initiating enzymatic activity that deepens aromatic complexity. The cherries are then depulped, and the parchment rests in open tanks for 12 hours before moving into a submerged fermentation stage. This dual approach encourages a uniform breakdown of mucilage, resulting in a cup of remarkable clarity and balance.

After fermentation, the beans are washed in channels — a traditional step that guarantees cleanliness and highlights natural acidity. Finally, the coffee is dried in a mechanical dehumidifier at 38 °C until reaching 10–11.5% moisture, a controlled method that preserves delicate aromatics and ensures stability.
