Pink Bourbon, a rare variety from Cauca, Colombia, is recognized for its pink cherries and genetic closeness to Ethiopian heirlooms. Its cup is elegant, floral, and fruit-driven, making it one of the most prized profiles in specialty coffee.
Harvest begins with careful handpicking at peak ripeness. The cherries first undergo a short aerobic fermentation in whole fruit to develop aromatic complexity. After depulping, a second controlled fermentation in parchment enhances the coffee’s bright acidity and clarity. The beans are then washed with fresh mountain water and gently dried at 38°C, before being stabilized in cool storage to preserve freshness and nuance.
